It's what's for dinner. I think I need to spend some time on recipe sites instead of blogging. I swear every night we have some sort of chicken on some type of lettuce. Add salad dressing and ta da, healthy dinner. We aren't big on veggies in this house, so I get stuck on salad as a low calorie healthy meal. The kids of course aren't big on anything. Brooke could live on ABCs 123s and Breanna's dinner of choice would be mashed potatoes and gravy every night. Personally I like chicken every night but I think hubby is getting sick of it. The kicker, he's our cook. But since I'm the one who does the grocery shopping, my limited food imagination lands chicken and lettuce in our fridge week after week. Oh yeah, I shake and bake a pork chop and nuke a pouch of Uncle Ben's rice every once in a blue moon. But that's just to give him a break, I just as happily eat some sort of chicken on lettuce myself.
Any super easy ideas for the culinary challenged mom with a veggie despising family?
Anyone? Anyone? ... Bueller?
I'm the same with pasta, we have it in some form at least three times a week. That's pretty sad, considering I only cook 4 nights out of 7 due to our shedules. At least chicken is healthier.
For recipe ideas, just google an ingredient list of what you have on hand ( chicken, rice, corn etc.) then the word "recipe" and viola, you get recipes.

Tomorrow I'm making chicken noodle soup in the slow cooker and Friday I'm making Vigo Yellow rice with turkey sausage in it...They are yummy. Will give you recipes IF you want. Our struggle over here is cooking something Carly will eat. She has a very limited list. Tonight was the first time in a LONNNNG time she ate something new. Spaghetti USED to be her favorite. Then she decided she didn't want anything to do with it. So, I gave her the noodles, mixed in a little (healthy) butter and some shredded cheddar cheese. It was a hit....WOO HOO. Tomorrow IS another day though........

By the way...we settled on McDonald's!! :) Off to plan something special for tonight!!! Maybe I will dethaw the stew meat in the freezer to make beef stew only Michael and I will eat! :)

We eat interesting things here so my husband has to tell me when something is a "keeper" so I'll remember to make it again. I get easily bored and experiment in the kitchen all too often. Last night I made noodle bowls with buckwheat noodles, chicken (ha), edamame, cabbage and a bunch of seasoning and spice components. My son ate spaghettios.
Usually I make him eat what we eat. One of his favorites is cheese tortellini with turkey sausage, green peas and a pesto cream sauce. He also really likes chicken and dumplings.
I can handle the same lunches day after day but dinner always has to be something different.

Oh he's a great cook! However, cleaning up after, not so much. And how he can dirty a sink full of dishes in mere seconds kills me!
All these ideas sound great, but again I need all the ingredients on my grocery list. Could ya'll work on that for me?

As you are out there enjoying my child rearranging your mulch I've been cooking. Yummy and simple. I call em taco burgers. 2 lbs lean ground beef, one envelope of taco seasoning (the powder stuff) and shredded cheese of your choise. We use the taco mix cheese 2% fat. Mix it all up in a bowl and make your patties...YUMMY. No bun needed.
